Chili Lime Ginger Chicken

Ingredients
4 or 5 boneless, skinless chicken breasts
¼ cup chopped cilantro
Juice of 4 limes
Zest of 2 limes
2 whole red chilies
2 ½ inches of ginger, peeled
1 cup extra virgin olive oil
Sea salt and cracked pepper to taste
Preparation
Place all ingredients, with the exception of the chicken breasts, in a food processor until slightly chunky
Place 2/3 of marinade as well as the chicken breasts in a dish, ensuring chicken is well coated
Marinate chicken in the fridge for 12-24 hours
Place chicken breasts on low heat on the BBQ or grill for approximately 15-20 minutes (BBQs vary, check to ensure chicken is cooked through before serving)
Serve chicken with reserved 1/3 of marinade for dipping
