Slow Roasted Rib Eye

Ingredients
1 spring rosemary
1tbs chopped thyme
2tbs chopped parsley
4 cloves garlic chopped
2tbs olive oil
2.5-3lb rib eye roast
1tbs salt
pepper
Preparation
Mix herbs, garlic, olive oil and smear over roast. marinate 24hrs. Rub in salt and pepper and roast in 375 degree fahrenheit oven for 15 minutes, then lower heat and cook at 325 for 45 minutes until thickest part reads 118F. Let rest uncovered for 45 minutes, wrap in plastic and chill in fridge.
