Smoked TOFU A.L.T

Ingredients1 pkg (210g) Smoked Tofu, thinly sliced
1 tsp. canola oil
2 avocadoes, sliced
1 large tomato, sliced
4 leaves romaine lettuce
2 Tbsp. light mayonnaise (vegan/ soy-based to make this a vegan recipe)
8 slices whole wheat bread
1. Heat up the oil in a frying pan and fry slices of smoked tofu on both sides until crispy. Set aside to cool on a paper towel.
2. Spread half Tbsp of mayonnaise on one slice of bread. Top with lettuce, tomato, smoked tofu slices and avocado. Top with another slice of bread.
3. Repeat with the 3 remaining sandwiches.
4. Cut sandwich in half to serve.
