Lemon Berry BURST Fruit Pizzas

Ingredients

Maple Yogurt Spread: (makes approx. ½ cup)
½ cup cashew butter
2 tbsp. freshly squeezed lemon juice
2 tbsp. maple syrup
1 tbsp. water

1 slice (22g) enerjiveâ„¢ Lemon Berry BURST Quinoa Snack Crisp

1 large strawberry, sliced
6 blueberries
Fresh mint, minced

Preparation

Directions
1. Place cashew butter, lemon juice, maple syrup and water in a high speed blender
and blend until smooth, adjust texture with additional water if necessary.
2. Spread 1 tbsp cashew mixture onto enerjiveâ„¢ Lemon Berry BURST Quinoa
Snack Crisp and top with your favorite fruit and mint.
3. Enjoy

*Tip
Try making your own cashew butter by blending 2 cups of soaked cashews and 1 tbsp.
melted coconut oil in a food processor. Add a little bit of each ingredient at a time
processing until smooth. Store in the refrigerator
