Braised Duck

Ingredients
marinade ingredients:
- 4 l duck fat
- 2 cinnoman sticks
- ¼ cup peppercorn
- 1 tbsp allspice
- ½ tbsp juniper berries
- 2 tbsp curry powder
- ¼ cup kosher salt
- 2 oranges cut in half
- 2 onions cut in half
- 12 cloves of garlic
- 1 tbsp fennel seed
- 1 tbsp cumin seed
Preparation
- Combine ingredients and pour onto half duck in roasting pans.
- Place in hot box 170’f overnight 16-24 hours until duck is tender.
- Carefully remove duck and reserve marinade in a fridge for next use.
