Braised Duck

Ingredients

marinade ingredients:

  1. 4 l duck fat
  2. 2 cinnoman sticks
  3. ¼ cup peppercorn
  4. 1 tbsp allspice
  5. ½ tbsp juniper berries
  6. 2 tbsp curry powder
  7. ¼ cup kosher salt
  8. 2 oranges cut in half
  9. 2 onions cut in half
  10. 12 cloves of garlic
  11. 1 tbsp fennel seed
  12. 1 tbsp cumin seed

Preparation

  1. Combine ingredients and pour onto half duck in roasting pans. 
  2. Place in hot box 170’f overnight 16-24 hours until duck is tender. 
  3. Carefully remove duck and reserve marinade in a fridge for next use.
