Molson Canadian Fruitcake

Ingredients

  1. 473ml/ 16oz. Molson Canadian beer

  2. 3 Cups dried fruits (apples, pears, plums, dates) chopped

  3. 3 Cups All-purpose flour

  4. 1 1/2 Cup packed brown sugar

  5. 1 tsp Cinnamon

  6. 1/2 tsp Allspice

  7. 1 tsp Baking soda

  8. 1 1/4 Cup butter

  9. 4 Eggs

  10. ½ tsp Vanilla extract
  11. 1 tsp Lemon zest
  12. 1 Cup Walnuts, chopped
  13. ¼ Cup coconut, flaked
  14. ¼ Cup Maple syrup
  15. ¼ Cup Water
  16. 2 Cups Powdered Sugar

Preparation

  1. Pour half of the Molson Canadian into a saucepan and bring to a boil. Remove from heat and add fruit. Let stand 15 minutes, stirring occasionally.
  2. Stir together flour, brown sugar, spices and baking soda. Using a mixer, cream together the brown sugar with the butter.
  3. Add the eggs one by one until fully incorporated.
  4. Add the remaining beer, lemon zest and vanilla to egg mixture. Add the coconut. Add the flour one cup at a time.
  5. Fold the dried fruit mixture and nuts into batter. Mix together the maple syrup, water and powdered sugar to make the icing.
  6. Turn into greased and floured 10-inch tube pan.
  7. Bake in 350 F oven about 45-55 minutes.
  8. Cool in pan on rack 10 minutes. Remove from pan and cool completely. Drizzle the maple icing overtop and slice.
