Cucumber Mint Smoothie

Ingredients

  1. 1 whole cucumber - peeled and seeded
  2. ½ juiced lime
  3. 1 tsp mint - chopped
  4. 1 cup vanilla yogurt

Preparation

  1. Peel and seed the cucumber cut into 1 inch pieces.
  2. In a blender add all ingredients and blend until smooth.
  3. Pour into a glass and serve. You can reserve the smoothie wrapped in the chiller over night.
  4. Be sure to give the smoothie a vigorous stir or place back in the blender and pulse for 30 seconds prior to serving.
