Monster (Spinach) Dip

Ingredients

  1. 1 can (540ml) chckpeas, drained & rinsed
  2. 1 cup (250ml) local fresh baby spinach
  3. 1 cup (250ml) local cheese (cheddar or havarti)
  4. 1/4 cup (50ml) fresh squeezed local lemon
  5. 1/4 tsp (1ml) pepper or hot sauce
  6. 1/2 cup (125ml) water (approx)
  7. 1/4 tsp (1ml) clove garlic (optional)
  8. salt and/or pepper to taste
  9. local raw vegetables:  baby carrots, celery, cauliflower, broccoli, peppers etc
  10. variety of mini-pita, nan or rice crackers

Preparation

  1. Mix in food processor, chickpeas, garlic & spinach until they are finely chopped. 
  2. Add cheese, lemon juice, pepper. 
  3. Gradually add water to thin the dip to desired consistency.
