Olive Oil Citrus Hollandaise

Ingredients
- 1 Ounce Lemon Juice
- 6 Ounce Orange Juice
- 1 Pound Oil Olive XV Italy
- Kosher Salt to taste
- White Pepper to taste
- 3/4 Cup Egg Yolks
Preparation
- Reduce orange juice by 2/3 and let cool
- Warm olive oil to 100 degrees F
- Place yolks of 6 eggs and orange juice into S/S bowl
- Over water bath, whip eggs until they are thickened and creamy
- While continuously whipping, slowly add olive oil
- Adjust thickness with water and lemon juice
- Season with salt and white pepper
- Keep in a warm location at approx 100 degrees F
