Olive Oil Citrus Hollandaise

Ingredients

  1. 1 Ounce Lemon Juice
  2. 6 Ounce Orange Juice
  3. 1 Pound Oil Olive XV Italy
  4. Kosher Salt to taste
  5. White Pepper to taste
  6. 3/4 Cup Egg Yolks

Preparation

  1. Reduce orange juice by 2/3 and let cool
  2. Warm olive oil to 100 degrees F
  3. Place yolks of 6 eggs and orange juice into S/S bowl
  4. Over water bath, whip eggs until they are thickened and creamy
  5. While continuously whipping, slowly add olive oil
  6. Adjust thickness with water and lemon juice
  7. Season with salt and white pepper
  8. Keep in a warm location at approx 100 degrees F
