Pecan Maple Almond Rice Cookie

Ingredients

6 tablespoons almond butter
6 tablespoons honey or maple syrup
½ teaspoon cinnamon
½ cup coarsely chopped almonds or pecans
1 cup crispy brown rice cereal

Barbara's Brown Rice Crisps or Rice Crispies

Preparation

Beat almond butter and honey/ maple syrup until smooth. Stir in cinnamon, almonds and cereal. Shape mixture into teaspoon balls and place on lightly greased baking sheet. Using a wet fork, flatten cookie balls. Bake 350 F for 8-10 minutes until edges are golden.
